The lemons are juiced and pulped and the resulting pulpy goodness is added to the pressed olives bringing together the perfect balance of flavors. This zesty oil is olivey with slight bitterness, combined with the rich peppery flavor of the oil, and the zing of lemon. The result is a burst of flavor, and a great new seasoning for your cooking. Consider this as a drizzle over perhaps ravioli scattered with fresh parsley. Add it to your own “Caesar’s Salad”. Drizzle over grilled chicken or fish. Divine in a pasta salad. This will also work beautifully in your Aunt Elisabetta’s cookie recipe.
