This 2015 pressing is a delightful oil from Tuscany—estate bottled at Castello del Trebbio in Pontassieve. The estate is located east of Florence, not far from Fiesole and the confluence of the Arno and Sieve Rivers.
To the eye this filtered oil is yellow with flecks of green and gold.
To the nose, the aroma is intense and complex with rich notes of vegetable, with green almond, and artichoke.
To the mouth, it is ample and potent, with tones of fresh herbs, and slightly bitter, with a peppery finish.
The estate has 10,000 olive trees and the cultivars are Frantoio (85%), Leccino (13%), and Moriaolo (7%).
It is a wonderful selection drizzled over beef carpaccio, ribolitta, roasted fish, and grilled meat such as the famous Tuscan Bistecca alla Fiorentina.
