On the Italian island of Sardinia, Argiolas produces this truly fine olive oil from estate-grown olives.
Crafted from hand-harvested olives on the island of Sardinia, this unfiltered yellow-green, fruity and grassy oil is light and aromatic, with a gentle taste that brings forth apples, tomatoes, eggplant, and almonds. There's a fine aftertaste with slowly developing characteristics of balanced bitter and peppery. It's a perfect oil for cooking or drizzling over fresh salad greens. Recently reviewed, Argiolas Iolao, “…tastes like green leaves, bitter olives, orange zest–it’s a dry, kind of earthy olive oil” that can be used on grilled mushrooms or swordfish.
The olive cultivars include Tonda di Cagliari and Pizz'e Carroga.
Three generations now work together to grow the finest grapes and olives on their family estate outside of Cagliari. The estate was founded in 1918, when Francesco Argiolas started from scratch and planted the first vineyard with the assistance of some prisoners of war.
