The aroma is clearly of olives, with hints of vegetables, particularly artichoke, and maybe a hint of banana. The taste is delicate, well-rounded, and a balance of herbaceous and fruity tastes. This selection is good with fish and mayonnaise -- anywhere that you want an oil that is not overpowering like its Tuscan big brothers. Very low acidity (0.12%).
