This extra virgin organic olive oil from the "Le Palombe" farm in Umbria is produced in limited quantity using traditional cold-pressing methods. The olives are hand-gathered, and cold-pressed in a stone mill, with stone on stone. The olive is bottled after a period of natural decanting. The oil has very low acidity (0.19%), and a rich, delicate, long-lasting flavor.
Our tasters noted the rich, green color, sweet aroma, and a distinct peppery finish.
The olives are grown near the town of S. Angelo di Spello in the province of Perugia, Umbria.
