One of the best balsamico producers in Modena provides the vinegar for this exquisite jelly. Crafted on a small farm in San Giovanne di Natisone in Udine, in the far reaches of Fruili Venezia Guilia. Livio Pesle combines balsamic vinegar, wine, some sugar and a little pectin to make this magical jelly.
This rich, mild jelly brings together the right combination of sweetness and sour. Try mixing with Extra Virgin Olive Oil (perhaps Grignano Valpolicella?), and perhaps a little water, to make a fantastic dressing for your salad. The adventurous might try it with ice cream.
This condiment makes a lovely accompaniment for parmesan cheese, roasted meats, or fish carpaccio. This makes a classy and lovely gift!
