Del Carmine’s olive trees in Ancona are enriched with the saltiness of the wind from the sea, and yet are protected by the hills from the north wind. These are ideal conditions for a good harvest. Del Carmine proceeds with the precious harvest when the olives begin to change color. The olives are taken to the mill in for processing within 4-6 hours. The modern continuous-cycle olive-press, located close to the olive grove, completes the production cycle of the well regarded extra virgin olive oil.
Azienda del Carmine grows both olives and grapes (for their notable Verdicchio di Matelica DOC) and the enclosed valley runs north to south. This growing area is unique among the valleys of the Marche region, as the others open towards the Adriatic. The climate is continental with cold winters, hot summers and a wide daily temperature range; this microclimate enhances the characteristics of the vine and the olive trees.
Antonio and Antonella Roversi work in partnership to guide the successes at Azienda Del Carmine. They have developed products with a strong personality. For olive oil aficionados, the “single varieties” are exceptional. Each is extracted from a single variety – Frantoio, Leccino, Ascolana – in which you find the purity of Olio de la Marchia.
Ascolana is harmonious and fruity with a hint of tomato leaves, and lesser notes of grass, artichoke and mature tomato. The intense taste makes it ideal for grilled meat and strong dishes.
At Azienda del Carmine, the prized Ascolana olives are grown at 50-100m above sea level and the trees are pruned to a cone shape. Ascolana olives are harvested in late September and the oil is bottled in late November. At each step, the highest quality equipment is used to preserve the superior qualities of this oil.
Olio de la Marchia Ascolana has a low acidity level of 0.34 g/100g (oleic acid) and for those considering hydroxytyrosol, the polyphenols level is: 706 mg/Kg (gallic acid).
Packaged in a dark glass bottle with a distinctive label, Olio de la Marchia, is available in a 500 ml. bottle or in a gift set. A neck tag indicates the varietal.
2008: Best of Class and Gold Medal at the Los Angeles International Olive Oil Competition.
Received Tre Olive Award from Slow Food for 2007 Ascolana.
