In the shadows of the Dolomite Mountains, Eleonora Cunacia harvests herbs and greens, as she learned from her grandmother on their walks through the fields and forests. She considers herself a nomad gatherer as she harvests herbs, berries, pine resin, and roots in a pattern starting in early spring at the bottom of the valley. Many of these wild culinary ingredients are protected and require a special permit to pick even limited quantities. The permits are only issued to residents of the national park in which she gathers.
Each day, after the daily harvest, her brother, Giovanni, crafts them into thick cream-like sauces. Careful attention is paid to each ingredient, retaining the delicate flavors of the forest, streams and mountains.
Luppolo is Wild Hop Pesto. Young, wild mountain hops are collected in the early spring when the bud and leaf are tender and small. The flavor is delicate, almost reminiscent of young asparagus. The hops are carefully ground into a paste with corn oil (olive oil masks the delicate flavors) and salt; simple and pure. The texture is smooth, almost creamy, and light green in color.
Ideas: Delicious on cold slices of veal or chicken. Add to a frittata with zucchini. Stir into a risotto just before serving.
