In the shadows of the Dolomite Mountains, Eleonora Cunacia harvests herbs and greens, as she learned from her grandmother on their walks through the fields and forests. She considers herself a nomad gatherer as she harvests herbs, berries, pine resin, and roots in a pattern starting in early spring at the bottom of the valley. Many of these wild culinary ingredients are protected and require a special permit to pick even limited quantities. The permits are only issued to residents of the national park in which she gathers.

Each day, after the daily harvest, her brother, Giovanni, crafts them into thick cream-like sauces. Careful attention is paid to each ingredient, retaining the delicate flavors of the forest, streams and mountains.

Just what you might guess, this Aglio della Regina is Queen's Wild Garlic, a wild type that Eleanora harvests from the hills near here home in Santa Massenza, near Trento. For map fans, look to the north to Trentino Alto Adige, to the north near Austria.

Recommendations? Stir some into scrambled eggs or atop a slice of toast (better yet, grilled bread), topped with eggs. Try with pasta, mashed or baked potatoes, and especially as a finish on simply grilled fish.
