From Costa dei Rosmarini comes this traditional Ligurian extra virgin olive oil, notably packaged in a traditional Ligurian gold foil-wrapped bottle. The Rosemarino farm is located near the village of Portofino and the Tigullio Gulf.
The first customer for this fine oil was the notable Hotel Cipriani in Venice. Its use has expanded to renowned chefs, several of whom have been awarded by the Michelin Guide.
Santa Chiara is produced in Liguria, in small quantities to maintain its superior qualities controlled by professional tasters. Santa Chiara is composed of Taggiasca olives. The combination brings forth an oil that is delicate with no bitterness. You may note a delicate fruit fragrance, sweet almond, note of artichoke. Santa Chiara is light and fruity with a slightly peppery aftertaste. It is perfect as a finishing oil.
Santa Chiara level of acidity is a very low 0.3%. Santa Chiara is produced with only one label, so all bottles sold in the U.S. meet the stricter EU labeling standard.
Santa Chiara is an excellent delicate oil and is best suited to finishing salads, fish, grilled meat, carpaccio, pastas sauces, and mayonnaise.
