A blend of Gentile di Chieti, Dritta, Toccolana, and Tenera Ascolana olives.
Blending various olives, which are pressed separately, is the real art of olive oil production. Careful choices of how to combine, enhance and balance characteristics must always take precedence over ease, convenience or any other factor. Pressing different varieties of oil individually allows us to taste the flavour and the quality before putting together a balanced, reasoned blend of different varieties.
This oil can be used straight from the bottle on cold meat dishes (like carpaccio), vegetable starters and fish. It is also good on “white” pasta (without tomato), salads with bread and on bruschette (toast). Nicely gift boxed.
Opera Mastra is light green in colour with straw-yellow flecks. The aroma is medium fruity, recalling fresh, green olives, which derives from the combination of cultivated varieties. The taste features an excellent structure and balance with a hint of artichokes and a pronounced flavor of ripe tomatoes. Crafted by Giuseppe Ursini, member of the Oil Masters Guild.
