From the Val d’Orcia hills, each of the variety of olives at Chiarentana is hand picked separately as they mature. The olives are then immediately ground at the press on the estate at Chiarenta and La Foce.

The fragrance of this Pendolino monocultivar extra virgin olive oil is noteworthy and recalls the smell of bitter almond, which is confirmed in its taste. In taste, the hint of bitterness is barely perceptible, while the pungent sensation in the throat remains firm and persistent. This is particularly delicate this year.

Pendolino is at its best with fish dishes, such as shrimp and chick-pea soup, tuna or swordfish carpaccio, raw seafood, or risotto with zucchini and shrimp.

Der Feinschmecker, Gambero Rosso, Slow Food and Merum have all bestowed significant prizes on the oils from Chiarentana.
