This most unusual and rare selection comes from the far northeastern reaches of Italy, not far from Trieste. This truly rare oil is grown on the border with Slovenia. This 100% Bianchera extra virgin olive oil carries the DOP Tergeste denomination, and is a Slow Food Presidio recipient.
Mildly fruity, it matches well with seafood, salad, and pasta dishes and especially with the sweet-and-sour cuisine of the region.
In Flos Olei, Marco Oreggia says the aroma is " clean and rotund, rich in elegant hints of almond, cinnamon, and black pepper, together with fragrant notes of mint and rosemary."
Marco adds recommendations to maximize the mellow and vegetale notes of the oil, along with distinct bitter notes, to include legumes appetizers, salmon carpaccio, tomato salads, grilled potatoes, risotto with artichokes, grilled poultry and mozzarella cheese.
