This is the splendid Gran Riserva Fruttato Verde from Accademia Olearia in Sardinia, where the olives grown are Bosana (65%), Semidana (30%), and Tonda di Cagliari (5%).
It possesses a lovely aroma of unripe tomato, apple and almond, enhanced by notes of basil, mint, and rosemary. The taste evokes artichoke, lettuce, and celery.
Ideal on farro appetizers, steamed beans, tomato salads, potatoes, bean soups -- and typical Sardinian fare pasta with salmon, mussels, and swordfish.
