Acetaia Cattani White Balsamic is produced by the Cattani family using sweet must derived from select organically grown Trebbiano grapes. A low-pressure cooking method keeps this richly perfumed must its original beautiful golden color and does not change a dish’s natural look while natural fermentation enhances the fragrance. 

This is a young, zesty vinegar, and it provides a fresh, bright zing. Try on grilled vegetables, fish and white meats. Delightful on summer salads.

"Olivewood" balsamic vinegar from the Cattani family in Modena, is aged in olivewood barrels! This premium balsamic is thick and rich with a nice balance between sweetness and acidity. The initial balsamic flavor finishes with a hint of molasses and vanilla. Drizzle over ripe tomatoes, parmesan cheese and vanilla ice cream. 

Best for rich preparations where only a drizzle will do. Finish roasted meats, a finish in Cappelini en Brodo, over ice cream, with fruit, and of course, caprese. Estimated age: 8 years.
