Frantoio Franci Villa Magra "Riserva di Famiglia" Extra Virgin Olive Oil: This is ample, strong, and intense. Produced in the hills near Orcia and Montalcino from the varieties Frantoio "Correggiolo" (50%), Moraiolo (35%), Leccino (15%). This oil has the classic flavors of Tuscan olive oil--and it is regarded as the "Fruttato Intenso" selection from Frantoio Franci. It is known for a strong aroma of artichokes and grass, and develops hints of almonds and citrus, before bringing in peppery and bitter flavors -- making it a truly remarkable oil. Viola Il Sincero Extra Virgin Olive Oil: Marco Viola is the 4th generation to care for the trees at the family farm in Umbria. He crafts Il Sincero with an eye toward the amazing characteristics of the Moraiolo olive. His age-old trees grow rocky soil on hillsides near Sant'Eraclio Foligno in the province of Perugia. This new selection, Il Sincero, is full bodied with herbaceous notes of thistle and the balsamic scent of mint, basil, and rosemary. The taste will fill the mouth with hints of thistle, black pepper, aided by almond on the finish. Meet your match. Ideal food pairings include bean soup, chickpea cream with toasted bread, larded pork fillet, and salad of wild greens. Adventurous pair this with roasted game including hare and pigeon. This is great with sweet pepper sauce. Marco recommends this with medium mature cheeses, and also with orange or tangerine sorbets. Olio Librandi Nocellara Extra Virgin Olive Oil: In a word, this one is outstanding. The five Librandi siblings work together to bring simply excellent extra virgin oils to market. Tenute Librandi is located in Vaccarizzo Albanese in Cosenza, Calabria. With 27,000 trees and a mill on the property, they are able to mill within four hours of picking. Nocellara yields oil that is green with golden yellow hues. The aroma is strong and rotund. You’ll note rich, fruity notes of ripe tomato, banana, and white apple, with hints of basil, sage, and mint. Complex and vegetal; some note celery, lettuce, and broad beans, finishing with characteristic bitterness and pungency. Certified Organic.
The aroma is fresh and spicy, fruity with elements of tomatoes and tomato leaf. Once on the tongue, there is a vapor that makes the mouth sing.
