Madonna del Carmine is a small, ancient church which lends its name to Azienda del Carmine, where the olives are grown; the oil is the very gift of this land. Olio del Carmine was the first variety produced by Azienda del Carmine and its quality has always been guaranteed by the care in the fields during the year, by the choice of the time of gathering (changing every year depending on various conditions) by the immediate pressing in the two-phase continuous cycle olive press which is located near-by, by the product storage in steel containers under nitrogen and at a controlled temperature. The result is a balanced and soft oil. 

Olio del Carmine is a blend of Leccino, Frantoio, Pendolino, and Carboncella olives. Medium fruity and green with aromas of fresh grass, almond, and the leaf of tomato. The flavor is persistent with both sweet and spicy characteristics.

Versatile, medium fruity. Excellent on first courses, including salmon appetizers, bruschette with vegetables, farro salads, pasta with tomato sauce, baked and roast poultry and lamb, and flavorful salads. 

At Azienda del Carmine, the prized Ascolana olives are grown at 50-100m above sea level and the trees are pruned to a cone shape. Ascolana olives are harvested in late September and the oil is bottled in late November. At each step, the highest quality equipment is used to preserve the superior qualities of this oil.

Ascolana is harmonious and fruity with a hint of tomato leaves, and lesser notes of grass, artichoke and mature tomato. The intense taste makes it ideal for grilled meat and strong dishes. 

To enjoy, more of the flavors of Ancona and Azienda del Carmine, we are happy to include one of their fabulous pastas. 

The pasta selections are crafted with bronze dies in the classic shapes of traditional Italian pastas. The pastas are made with high quality semolina used by generations of quality pasta makers and they are very patiently dried on site. 

The processing with special bronze instruments enhances the handcrafted characteristics providing a rougher surface for the pasta to absorb the tomato “ragù” sauce and other sauces,

Mezze Maniche – is a bit of a shorter rigatoni. (Maniche translates as sleeves!) This is the classic, dense, flavorful pasta, and it cooks perfectly to al dente.
