From the area of Castagneto Carducci – in Bolgheri, Tuscany, Fonte di Foiano's blend is composed of Frantoio, Moriaolo, and Leccino olives, harvested in November. Polyphenols: 1096 mg/kg.

After filtering, the exquisite oil is clear. The Grand Cru Selection is produced with the best varieties of the olive-grove, hand picked in very early harvest. Intensely herbaceous and fruity, with notes of green tomato and artichoke. Intensely hot and bitter. Best for raw use--as a finishing oil.

We were in the right place at the right time when we met Filippo Alampi from Fattoria Ramerino at Olio Capitale in Trieste in March 2013.

We were struck by the superior quality of this extra virgin olive oil from his estate outside of Firenze. Primus is pressed from the earliest olives while Dulcis is pressed from olives that ripen a short time later. Primus is full of intensity, while Dulcis is slightly softer.

The aroma is of fresh olives and green grass. Primus brings forth an intensely spicy and bitter combination. With the fruity green olive taste, you may note hints of grass and artichoke. The blend is unique in our collection: Moraiolo (60%), Frantoio (20%), Leccino (10%), and altri or other (10%).

We have learned that Guadagnòlo is the name for a terra cotta jar used by millers ages ago to recover oil from the tools of the pressing, a lovely ancient find evidencing the value of oil then and now.

We recommend this with the local foods of Tuscany: ribollita, bean soups, grilled meats, and cooked vegetables. In each case, finishing with Primus will elevate your recipe.

The farm has been granted EU organic grower certification.

The Quattrociocchi family has been growing olives since the year 1888, their passion handed down through generations. The family farm, the Quattrociocchi home for generations, is located among centuries old olive groves on the Alatri hills, in the heart of the Ciociaria area of Lazio, southeast of Rome. The olive grove spans approximately 120 hectares and with 34,000 trees of the Moraiolo, Leccino, and Itrana varieties. Olivastro is a monocultivar oil, composed solely of Itrana olives. The oil is certified organic. 

The entire product processing cycle takes place on the farm which sets the standards for organic family: from growing and harvesting the olives to the crushing, all steps are completed directly in the farm’s own oil mill. The oil is then stored in steel silos, where it remains until bottling. 

A light green oil with golden notes. It is intensely fruity with elements of fresh herbs enhanced by notes of cardoon and green tomato. Bitterness and spiciness are well balanced, yet the spicy characteristic is persistent.

Best on fresh green salads, pinzimonio, roasted and grilled vegetables, broiled and grilled fish, and pasta.
