This year, the Intini farm was noted the 2020 Flos Olei Farm of the Year. This producer has received awards from all of the best competitions and guides, including Slow Food, Il Magnifico, Bibenda, Extravoglio, Merum, Slow Food Presidia, and Olive Japan (Best of Show 2019).

Let's set the scene. This exquisite olive oil hails from the lands of Alberobello. Is that name familiar? It is the famous town where the homes are the unusual looking, Trulli. 

This beautiful gift box is a tasting set of Piero Intini's best oils from his selection of eight varieties of cultivars, grown on his lands. The farm of Pietro Intini consists of 20 acres of olive trees between Alberobello and Valle d’Itria. In this area, Intini has found the perfect temperature range and a rich soil, important components in the production of an extraordinary oil with a remarkable level of phenolic compounds. 

Intini focuses on modern extraction techniques that allow the production of oil without exposure to oxygen. Intini is one of the few manufacturers in Italy to employ four different systems of milling and grinding, selecting each method based on the harvest year, cultivar, and ripening methods.

Olivastro, here is a special 100% Coratina olive grown near Alberobello that turns red when ripe. While this part of Puglia is known for the cultivar, Coratina, Intini's  is a special production from Organic farming. 

You will note a medium to intense fruitiness, marked by green scents, and a lingering impression on the palate. It is ideal for white meats and cooked greens, and also for green salads, caprese salads, and vinaigrettes.

The selection, Coratina, brings forth the best oil from this typical variety of the region. This is grown and milled with the result being an intensely fruity oil that surprises with elegant bitterness. Intini ensures prompt milling following picking, and this oil is packed with distinctive green and vibrant flavors to the palate. Match this selection with a first course, minestrone soups, red meat, grilled fish, and bruschetta.

Cima di Mola is the signature product of the Intini farm. This variety originates in the area of Alberobello. Intini has focused on this nearly extinct variety, once unjustly overlooked due to the high harvesting and manufacturing costs together with the low yield. This is the selection that led to the farm's Slow Food Presidia recognition.

The resulting product has excellent sensory and nutritional traits. It is both powerful and bitter, with an elevated polyphenol level.

We love Cima di Mola. It is matched perfectly for dishes with a robust taste, such as soups, (pulses), minestrone, grilled red meats — and is especially ideal with fava beans and chicory.

Top 50 in the World, Der Feinschmecker

The fourth selection, Bio, is a choice Coratina, similar to the Olivastra bottling. It features notes of cardoon and artichoke together with notes of fresh olives. The bitter and spicy notes are perfect partners to medium to robust tasting dishes. 

Bio is recommended with pasta (especially with vegetable based sauces), white meats, tuna and swordfish carpaccio, as well as grilled fish and vegetables.

Stallone's mill employs the latest technologies, and that milling provides the highest quality extra virgin olive oil with a high number of polyphenols. From the area north of Bari. 
The aroma is elegant and rich, with notes of herbs, almonds, sage, herbs, artichokes and cardoon. 
The taste is complex and noted for its persistence.  You'll note strong tones of bitter and pungency. 
Best food pairings? This is enjoyed with red meat, beans and bean soups, and grilled green vegetables. And, of course, bread.
