Always a favorite, Biancolilla is light and fruit-forward, opening with floral and
herbaceous aromas. The flavor is delicate and persistent, with mild
notes of white pepper and bitter greens. Crafted from Biancolilla olives that are harvested and crushed in October.
Antonella recommends her Biancolilla selection over fish: raw tuna crudo, poached fish, and
grilled fish of all kinds. It also makes a beautiful base for fresh
herb-based sauces like pesto and salsa verde. For those with a sweet tooth, Biancolilla is amazing in the preparation of desserts, especially ice cream!
This oil has very special handling. After picking, the very green olives are placed in a cold room to reduce their temperature before pressing, and then pressed within six hours.
