Erede is an extra virgin olive oil with a medium fruity character. We note the aromas are reminiscent of almonds and the taste has an aromatic persistence, as well. This is an ideal selection in combination with fish or meat carpaccio. Francesco Pepe tells us his favorites are, “fish like brill, orate, and sea bass. The bitter notes of this olive oil [work well] with fish courses, green salads, cheeses, and white meats.”
Erede is a monocultivar selection, produced by pressing only Marinese olives. Most notably, this cultivar’s olives have little pulp, making the extraction very difficult. The resulting oil yield is low but of great quality. This excellent quality oil is characterized by bitter and spicy notes.
Marinese is further difficult to work in an olive oil mill because paste tends to stick to the machine. To preserve the best fruity characteristics, the olives are picked from the beginning of October to no later than the 15th of the month.
The Marinese selection is primarily from ancient, secular, trees. For years these trees were abandoned. Francesco is among a small group of producers again growing Marinese for their best qualities, and he has recently planted an additional grove of 500 trees. It is the old trees that are used for Erede with the Slow Food Presidia recognitions.
The Marinese variety is developed only in a little area that includes a few villages near the Calore River such as Luogosano, Fontanarosa, Paternopoli, Sant'Angelo all'Esca and Montemarano.
