In the Cilento area of the region of Campania, there is a town named Controne. In that small town, Michele Ferrante grows heirloom beans and very special agricultural products, recognized by Terra Madre.
These tomatoes are cultivated in the municipality of Controne, under the Alburn Mountains, with a typical sweet and sour taste, rich in vitamins and minerals salts. These tomatoes represent one of the most significant rural traditions.
Rehydrate one hour in warm water. These are an excellent base for tasty first course and when simply seasoned with garlic, oil, and chili, they become a lively appetizer.
