Handmade Pasta "al Mattarello" Workshop
Join Chef Jessica Botta for a delicious afternoon of handmade egg pasta, such as these beautiful spinach tortelloni. In this hands-on workshop, we'll use a wooden board and a rolling pin ("mattarello") to transform our dough into thin sheets and cut tagliatelle or pappardelle as well as make filled pasta shapes like tortelloni, with prepared fillings. Jessica will demonstrate a sauce using some of her favorite Olio2Go selections, and we will enjoy a pasta feast together. Other snacks and non-alcoholic beverages are also provided. Plus, you will take home the pasta that you make!

Jessica is a culinary educator and aspiring food scholar with a master’s degree in food studies from New York University. Her academic research focuses on Italian cuisine and culture, exploring issues of authenticity and tradition in constructing Italian identity. Jessica was a chef instructor and program manager of the School of Italian Studies at the International Culinary Center under Dean Cesare Casella, and she also taught at the Institute of Culinary Education, both in New York City. Locally, she was director of culinary development and training at Fabio Trabocchi Restaurants for more than a decade. Prior to her career in Italian food, she studied Italian literature, and specifically, the Divina Commedia. But as some Italian scholars have pointed out, “What is the glory of Dante compared to spaghetti?”
