From the Tuscan estate of the notable cookbook author, Pamela Sheldon Johns, we have a limited number of 1/2-liter tins of her oil. On 15 acres near Montepulciano, in the southern Tuscan province of Siena, Pamela and Johnny tend to the olives on their organic-certified farm. Unfiltered.
This small production olive oil is a blend of Moraiolo, Leccino, Correggiolo/Frantoiana, and Pendolino. This year's selection has an amazing aroma and good full mouth feel. Notable peppery finish.
Carefully harvested, following old traditions, Pace da Poggio Etrusco is an oil with extremely low acidity. Produced in batches for quick processing at the mill, the olives are crushed in a continuous system for maceration, extraction, and centrifuge processing. With the processing water kept at a low temperature, a delightful oil is produced.
Pamela doesn’t harvest quite as early as some other producers, but her blend and her techniques produce very desirable oil with a noted spiciness from the Correggiolo olives. She refers to it as having a “fruity big flavor with a persistent herbal buzz.”
We’ve found this oil to perfectly complement many dinners – including steak, pasta salads, beans, a great swirl over soup, and also on grilled or roasted vegetables.
Tin packaging is prone to denting. A dented tin is a cosmetic issue that does not affect the quality of the oil.
