Moresca – well rounded, full bodied, sweet and fruity, elements of artichokes and almonds, and a peppery bite. Recommended with raw fish, fried squid, steamed fish, simple salads, polenta and couscous.
Nocellara Etnea – intensely fruity, balanced bitter and peppery features, with elements of green fruit, grasses, and fresh vegetables. Persistent bitter and spicy finish. Perfect as a seafood starter, with grilled vegetables, grilled cuttlefish, fresh cheeses, and vegetable couscous.
Biancolilla – Lightly fruity with slight bitterness, and elements of artichoke and light floral notes. Recommended with creamed vegetables, marinated fish, fish soups, raw veal, and crudité.
Nocellara del Belice – Full bodied, aromatic, distinctive, and complex with bitter and spicy features. Golden green, with elements of tomatoes and fresh vegetables. Serve with salmon carpaccio, tomato-based starters, grilled fish, grilled white meats, tomato bruschetta, and meat couscous.
Tonda Iblea – Fruity and grassy, with elements of tomatoes, herbs, and fresh cut grass. Perfectly balanced. Great with all cuts of beef, bruschette, grilled fish, Caprese Salad, and crudité.
Cerasuola – reminiscent of green fruits with medium-low intensity. Aromas of ripe tomatoes and fresh vegetables. Harmonious balance of bitter and spicy. Recommended with vegetable soups, roasted meats, mature cheeses, marinated fish, mushroom risotto, and roasted pork.
