This selection includes the top-of-the-line Villa Magra Grand Cru, Coratina, Le Trebbiane, and Frantoio Delicate. 

 

The Villa Magra Grand Cru selection from Franci is the best of the line - from the hills of Montenero d'Orcia at an altitude of 350-450 meters, hand-picked in October. A monocultivar of Frantoio olives with a fresh herbaceous scent, with overtones of artichoke, almonds, and flowers. Some are able to detect hints of cherry. The flavor is bold, spicy, and complex. Excellent with vegetables, meats, and fish. This works well with full-flavored foods and simply with pastas.

Coratina is from his Cru line. This monocultivar selection is decisive and enveloping, with a penetrating herbaceous character, with rich notes of artichoke and chicory. Taste it and you will know why Franci calls it powerful and elegant. This is a complex elixir with well defined bitter and spicy notes with long persistence and harmony.

The flavors are best described as intensely fruity, fresh, grassy, pungent, and complex. It is harmoniously bitter and peppery, well-structured, with a fresh finish of spicy grass. It works well with full-flavored foods and also enhances simple preparations. Consider with soups, raw or prepared vegetables, boiled potatoes, pasta, and well-matured cheeses. This is also Giorgio's favorite with crudo -- sushi!

Le Trebbiane is medium fruity with notable complexity and lovely elegance. This grove faces east and enjoys the most morning sun. It is recommended with bitter green salads (arugula, radicchio), and it is a blend of four olive varieties: Frantoio, Moraiolo, Leccino, and Olivastra Seggianese.

Frantoio Franci "Delicate" Frantoio extra virgin olive oil has a clear and fluid appearance of green colour with soft yellow reflections. This is ideal on all prepatations of fish, including seafood appetizers, carpaccio, and seafood salads, as well as baked or grilled fish and fish soups. This is marvelous on mushrooms and fresh cheese, and delightful in a homemade mayonnaise.
