Flavor: Fresh, vegetal, with notes of artichoke.
Pairings: Perfect on bruschetta, vegetable crudités, salads, artichokes, and asparagus. Excellent with fish carpaccio, seafood or vegetable pasta dishes, grilled meats, mushrooms, and artichokes, both raw and cooked, enhancing their aroma and flavor. Outstanding on oysters, sashimi, amberjack tartare, white fish, and shellfish. Surprising on castagnaccio and fruit sorbets.
