Every October, Cristina personally oversees the harvest as olives are picked at peak ripeness and pressed within just three hours of harvest in an oxygen-free environment. This preserves the oil’s freshness, integrity, and high levels of polyphenols (it’s a superfood!). The oil undergoes rigorous chemical and sensory analysis and is bottled to order, guaranteeing that only the very best reaches your table.
