This is a joyous new selection in from the master producer Salvatore Stallone. He works with his adult children at Le Tre Colonne. With the arrival of his first grandchild (a granddaughter!), they have created this very special oil from the Bella di Cerignola olive. The lands and productions are in the area north of Bari.
The cultivar, Bella di Cerignola, is autochthonous (native to the region). At Le Tre Colonne, they make an impressive effort to pick the olives at dawn, in the earliest hours of the day, before pressing promptly.
This extra virgin olive oil is more delicate than most and we found it delightful, with intense notes of fresh spring peas, broad beans, and aromatic herbs!
This oil appeals even to those of us who appreciate the most intense oils!
Best food pairings? Light sauces, delicate vegetables, homemade mayonnaise. Also salads with field greens, risotto with herbs, and simple beans like cannellini. Be sure to share your delights with children to establish their good taste sensations and food memories.
