We’ve traveled afar to this former region of the Italian Republic. The journey has taken us across the Adriatic to Croatia. In this less developed land the farmland is pristine and bordered by forests which aid in presenting a remarkable environment for olive trees. 

Depending on your perspective you may call the water between Italy and Croatia as the Adriatic or the Istrian Sea.

The farm in located in Zambratija, just a few kilometers north of Umag.

Trasparenza Marina is extracted from olives of the Leccino and Pendolino varieties, indicating climate similarities to Tuscany. The Istrian sea breeze enhances this fine oil, with salty accents combined with a hint of artichoke and aromatic herbs.

This is an ideal oil for preparations where the purity is foremost. This is a natural with raw fish and with all other seafood dishes.
