In the Cilento area of the region of Campania, there is a town named Controne. In that small town, Michele Ferrante grows these heirloom beans, recognized by Terra Madre.
Controne beans are tender and thin-skinned, and they cook to perfection in a shorter time than common beans. These legumes are full of healthy benefits!
We recommend Controne for Pasta e fagiole or a side dish. Simply cook the beans according to package directions, add an herb blend for seasoning, drain and drizzle with olive oil, sea salt and freshly ground pepper.
