From the Consorzio fra Produttori di Aceto Balsamico Tradizionale di Reggio Emilia, we share this amazing set of the Consorzio protected products, the truly special Gold Seal.

This selection is from the Acetaia San Giacomo. In their acetaia, or vinegar factory outside of Modena, they craft their special vinegars. Starting with the grape must, or juice of the Trebbiano grape and three others, the process begins. The must is reduced down to a syrup is copper pots. When they reach the desired consistency the syrup is poured into wood barrels where it is aged. After a number of years each barrel is classified gold, silver, or red cap according to its quality. The vinegars are rotated through various types of wood barrels to give it its desired characteristics. This vinegar set is a truly wonderful gift.

This set includes the full range of Consorzio protected Aceto Balsamico Tradizionale di Reggio Emilia.

Red Seal (12 year, 9 barrel batterie)

Silver Seal (18-20 years; 9 barrel batterie)

Gold Seal (25 years, 9 barrel batterie)

Entice your tastebuds with this exquisite gift culminating with San Giacomo Aceto Balsamico Tradizionale di Reggio Emilia, Gold Seal -- extravecchio-- is the most complex balsamic of the Gold, Silver and Red.
