From the noted agricultural estate and resort near Bologna, comes this remarkable olive oil. It's a monocultivar selection from the Ghiacciola olives. Very limited availability.

The Ghiacciola “Claterna” extra virgin olive oil has an enveloping aroma with fresh herbaceous scents of artichoke and tomato leaf. The mouthfeel reveals a complexity that ranges from aromatic herbs to green citrus leaves, fresh almond, apple and green olive; the opening is sweet, followed by a sharp spiciness and remarkable persistence.

Recommended use is raw, served on carpaccio and fish tartare, boiled legumes, roast fish, and pinzimonio (fresh raw vegetables).
